Appearance & Color: It has evolved into the classic, deep brick/brown color of a mature 60+ year old Rioja.
Aromas: Rich tertiary character, with a very intense and clear presence of dried thyme and herbs.
Serving: Due to the natural wear of the old cork, filtering, decanting into a carafe, and resting for several hours before consumption in an open carafe (without a cork) is recommended, so it comes into direct contact with oxygen. Initially, immediately after opening, the wine shows a strong acidity due to long-term entrapment in the bottle (reductive environment). However, after a few hours in the carafe, the picture changes radically: the acidity subsides, the wine balances, and releases its herbal aromas.
Serving temperature: Ideally at 18°C (cellar room temperature, not chilled, not warm), to fully showcase its aromas.
